I love food! That’s been true about me since day 1 according to my mom. I’ve always had a pretty big appetite and I can throw down! I love pizza, Mexican food, fried chicken, and cheeseburgers so going vegan never really appealed to me until one day I decided to give it a try for a few months just to test it out.

I didn’t go all the way cold turkey but I did go vegetarian first as I eased my way into the diet.

Going vegan changed my life I became more and more creative with my food and it opened up a new world for me. I quickly discovered so many delicious alternatives to meat and dairy. I incorporated Avocado in more and more dishes. I discovered my favorite go-to delicious quick lunch consisting of a  grilled onion bun with a spicy black bean patty sliced avocado mayo and sweet potato fries which I would choose over a cold cut turkey sandwich any day. Not only did I discover delicious recipes and expand my veggie intake I also looked better my skin was smoother, eyes brighter, I became much more fit and my energy level was really good!

I’d still eat meat on special occasions like Christmas and Thanksgiving but other than that I wasn’t missing meat, not with the benefits that came with being vegan!

Little by little I gradually went back to being vegetarian due to my love for cheese and pizza. I noticed I still felt healthier than when I ate a lot of meat but I didn’t feel or look as healthy as when I went vegan. I gradually started eating meat again occasionally but I’d always miss the way I felt and ate as a vegan.

Now I’ve decided to go back to being vegan and do it for real this time! What also helps is I live in Austin Texas where there’s literally vegan alternatives and vegan restaurants everywhere! I will post some on my next blog.

I’m so excited to explore my vegan options and start cooking and baking vegan again while getting more healthy and fit in the process! This time I’m sticking to it!

As we approach the new year, I can’t wait to spend 2018 with my furbaby Bella

I got Bella a couple months ago in October spontaneously, and as soon as I saw her I knew she was the pup for me! 

It all started one typical day at work when suddenly I was locked out of the system and after spending a decent amount of time in Technical Support no one could figure out why I was unable to access the system I needed in order to work. My boss allowed me to just chill out for the rest of my shift and browse the internet or relax for a bit. During that time I came across an ad for a chihuahua puppy that needed to be rehomed. Although the picture was hard to see of her I decided to contact the owner by email. 

The owner told me she had just sold her brother and there were 30 people who had shown interest in her ahead of me.  She was able to set up a 7pm meeting with me after work only if her 5:30 appointment canceled or changed their mind.

After I got off work I prayed that if the 5:30 appointment canceled then that would be a sign she was for me. 

As I’m driving down that way I got a call from the Lady telling me the 5:30 appointment canceled! I met up with her and saw Bella and instantly she had my heart! I bought her then and there and it’s been an adventure ever since! 

Bella is special she’s very unique and not your typical chihuahua, she’s very entertaining and sweet but feisty at times. Right now she is 4 months and a handful literally and figuratively! She picks and chooses who she likes and it’s so fun to see the different ways she interacts with different people. 

I’m so glad I got her when I did and I will definitely have plenty more to write about her!

       How many of you have always wanted to learn a new language? Start your own business? Invent something? Learn an instrument? Speaking for myself, at one point or another I’ve desired all of the above. However, the biggest obstacle I’ve faced I’m sure many of you can agree with is consistency. 

Something I’ve come to realize is, it takes more than raw talent and ability to accomplish your dreams and desires, it takes FOCUS and self-discipline. 

Someone once said when you try to take on too many new things at once usually none of them get done. What I learned from that is it’s important to perfect at least one or two things and build upon those giving yourself new challenges step by step. 

I’ve decided to start setting aside 10 minutes each day dedicated to learning something new, which in my case would be learning Spanish. Once I develop the self-discipline to regularly practice for 10 minutes a day, I will begin to add another 10 minutes and add another goal to dedicate another 10 minutes to and so forth.

Although it sounds easy, it’s amazing how we can so easily get ourselves wrapped up in our everyday routines or spend hours on social media or watching television and later wonder where the time went. The next thing you know days and weeks months and years go by and procrastination can often times prevent us from achieving our goals. 

I encourage you to join me in setting aside at least 10 minutes a day towards something you’ve always wanted to achieve. I’m sure you will be amazed by the significant changes that can be made from the small changes you make with your time as it accumulates each day.

Lastly, and most importantly, I live by the concept that I can do all things through Christ who strengthens me and if I truly believe that, and confidently know who I am and whose I am then  I know I have everything I need to transform myself into the person  HE has called me to be.

So let’s get to it! Join me in setting aside 10 minutes a day towards your dreams and watch as your once ideas become realities!

Christmas In Austin!

Christmas In Austin!

Christmas time is my favorite time of year as it is for many!

As I am originally from Ohio, this is my third Christmas living in Austin Texas. Even though I love it here in ATX and can’t complain about the amazing weather year round, I can’t help but miss the snow around Christmas time.
This year in particular I REALLY missed the snow and to my surprise it snowed this year for the first time in 10 years!!!I was ecstatic to see the the snow fall and lightly cover the tree tops in this beautiful city! It was an answer to prayer 🙂  My inner child came out as I stuck out my tongue to catch the snow flakes and pranced around my front yard while taking snaps! Snap chat stories of Austinities on 6th street downtown that night were hilarious and amusing! The snow fall here even made it to CNN!
Although the snow melted the very next day I was still content to experience snow again this Christmas season even just for a day.

As I’ve lived in Austin I’ve realized that there has never been a dull moment, there is always something going on and new places to discover every day! Holidays here are exceptionally big, and around Christmas time, it seems that each year there’s something more to do to celebrate the most wonderful time of the year!

Here is a list of some of the Christmas events and attractions this city has to offer!

  1. Trail of Lights-This event runs from December 9-23rd and is an amazing experience for friends, couples and families to enjoy! Not only is it a breathtakingly beautiful trail decked out in lights galore but the organization helps to feed the hungry when you bring canned goods. Many visitors in the Christmas spirit of giving show their support and are usually able to provide 25,000 MEALS for the Central Texas Food Bank. This is an experience I highly recommend to help make your Christmas complete!

    2. The Nutcracker Every year at the Long Center in ATX the Nutcracker runs from December 8-23rd. This is a performance you don’t want to miss. Whether your on a date night, out with a friend or a close family member this ballet creates an unforgettable experience! its a tradition many Austinites love as a way to celebrate the Holiday!

3. Follow The Star (FTS) Follow the star is a live outdoor production of the Life of Christ designed to tell the world the Rest of the story. It covers the birth of Christ all the way to the crucifixion and resurrection in a beautiful, captivating life like interpretation. FTS is free to the public and encourages food and monetary donations for the Hill Country Community Ministries which feeds over 2,000 people per month. About three hundred people are involved in the cast and crew of this live outdoor production and over 30,000 people have attended over the past 5 years! This event ran from December 7th to the 9th.

4. Winter Wonderland at the Circuit  Winter Wonderland is a brand new Holiday tradition that just opened this year located at the Circuit of the Americas! Millions of lights illuminate the park creating an atmosphere of holiday amusement. This event offers something fun for everyone to experience. This event includes a Skating Rink, Human Snow Globe, Singing Trees, Petting Zoo, Camel Rides, Santa’s Workshop, Carnival Rides, Hot Air Balloon Float, Merry Movies on the Lawn, Delectable Food, Shopping, their very own Tunnel of Lights and more! There’s no need for snow at a place like this to put you in the Christmas spirit in Austin, you will literally be walking in a winter wonderland!

5. Mozart’s coffee If you are in Austin around the Holiday Season come to Mozart’s coffee light extravaganza! This is a new event that reflects the unique style of Austin in an immersive, interactive experience surrounded by more than one million LED lights! Bring your camera to take photos and videos for an epic Instagram Facebook and Snapchat post!
This event will also include music featuring live choral singing spaced throughout the entire evening from more than 20 choirs from local schools and community groups tapped singing Christmas songs that range from traditional to “rock-the-deck” tunes. Thousands of lights at Mozart’s have been sculpted into giant iconic objects, custom made in Greece that evoke Austin’s culture and the Christmas season, including  a dozen guitars, the State Capitol, and a tree filled with presents.
In addition there is also an audio-activated wall of lights. Thousands of other lights will be strung in the trees and rooflines surrounding Mozart’s lakeside deck. For refreshments, enjoy Mozart’s acclaimed coffee and hot chocolate which can be purchased inside the coffee house and at kiosks outside, special holiday goodies from Mozart’s bakery will also be available!
This event runs from November 17 through January 1 (excluding Thanksgiving and Christmas day).

Those are just some of the fun ideas Austin has to offer during this Christmas season among others. Pop up shops with local vendors, live music and food trucks are also common events this time of year in the Downtown Austin area as well as the Christmas Tree lighting in Zilker Park.
So wherever you are this Holiday Season enjoy it to the fullest, eat drink and be merry! Try something new this year, spend quality time with your loved ones, enjoy the joy of giving, make this Christmas a memorable one and never forget the true meaning of Christmas and that Jesus is the reason for the season!
